AFAIK Turks got it from Byzantium when the latter allied with the Gokturk khaganate. The star and crescent later became a symbol associated with Islam when the Oghuz converted to Islam, more specifically in 1064, when the Seljuk sultan Alp Arslan destroyed Ani and had a huge crescent build on the town's cathedral.
