In fact, Ledger recently updated the desktop app so that you can see your erc20 tokens. It's still an experimental feature that you have to turn on in the settings, but LINK is one of the defaults.

You're right. Ledger and Trezor are both planning a Doomsday program into their devices that takes all funds on all hardware wallets and moves them to their own wallets.

I don't know why it sounds so ridicolous to you. Many exchanges already exit scammed, who's to say hardware wallet manifacturers can't pull something like that.
