The armor the mountain was wearing would be obsolete vs even black powder. Any modern rifle round would be fatal. Most pistol rounds would be too. Outside of a .22 but even then maybe not

You don't even need to mod it for 3 gun. Just load it with a heavy slug.
This. If you have to fuel him you want to keep him at range. Spear is the way to go. Heavier armor too, plate doesn't slow you down all that much over leather but you get way more protection for it.

Given that he managed to still get up and crush the Viper's head even while he was bleeding out from multiple stab wounds, i would guess that his rage mode is like being high on coke and charging at his opponent.
in this case, let's say you have a 9mm CCW, would you even bother aiming for the chest at that point or go for the head for a quick incap? i feel like shooting any other part of him would not stop him.

You really should just go for the finishing shot first, especially when the guy is 10 feet away from you and thinks you're unarmed and holding a trinket. You've got 15 rounds so shame on you if you miss every single shot.

Now that is 2mm stainless steel, whereas armor historically seems to range from 1 to 3mm and early on was mostly iron, later period though used carbon steel. This guy is huge and ridiculously strong, if he upped that to 4 or 5mm of hardened carbon steel... Yeah I want proper rifle rounds.
From what I can see, he's wearing chainmail under plates that could only be 3/8" thick at the most and likely made of some trash steel.
So...minimum .357 mag. 12 gauge slug is what I'd be comfortable with.
As for what contemporary weapon I'd use, probably a buckler and an arming dagger.
If I couldn't get a buckler, then I'd take a spear.

It literally doesn't matter what tool you utilize to essentially execute him. If you're going for style points you could shoot his dick off first. but there's literally no point in specifying what gun you would use because as long as it gets through his armor you're good.
Now I'd be hesitant to use shot, .22, or a 9mm because full plate might make penetration an issue, but any high caliber pistol, decent rifle round, or slug would probably do the trick.

Yeah but most shooters aren't going to be able to score a perfect head-shot or series of head-shots against a charging eight foot tall knight swinging a bastard sword at them.
It doesn't matter, whichever character has more plot armour is going to win, he could be hipfiring duel MG42's and you could have a rusty butter knife and you'd still win if you were more important to the plot.

9mm won't, but a .30-06 or .303 british at close enough range might. that front plate is for rifle rounds. plenty of soldiers get knocked unconscious/whiplash/broke neck, from large pieces of shrapnel hitting their helmets, being stopped, but dumping all that energy into the helmet thats attached by a pretty solid chinstrap.
