Been to the museum last week incidentally, here's what the Met description says about this armor:

Measure your torso and head up and then take a guess on how many plates you would need. Main problem would be that you couldn't make the shoulder guards due to the shallow curve and you'd probably overlap plates across your torso so get the same amount of coverage.

not everyone on a medieval battlefield is a fully plated, mounted Lord. People usually wore what they could afford. Most footsoldiers had less than that if any armour at all

That depends heavily on when and where, though with the extra note added that those who couldn't get their hands on the gear generally did what they could to stay out of the fights.
As for some period examples that may point towards footslogger shaving a bit more on than may be expected, lords buying armours by the hundreds (possibly even more) at once to equip their grunts was a thing in the 14th century if not earlier. Then by the early 16th century the standard equipment for Swedish peasant levies appears to have been helmet, breastplate, polearm or crossbow and an entire greatsword for sidearm. Pic's a bit earlier, perhaps the great grandfather of someone in said levy out to negotiate tax policies with the bailiff.
