Boar and deer hunting in the Italian mountains. AK's are legal to hunt with here, so that could be an option, but accurate AK's are expensive.
To be honest my first pick was completely unrealistic because it's expensive as heck.
Maybe a used pic related with slugs, but ig it'd have shit accuracy compared to a rifle of the same cost. But again an accurate rifle of the same cost would be shit for tactical purposes.

Not him, but for hunting, to take an ethical shot your rifle really should be around 1 MOA or better.
An AK can hit a man size target at 300m, or maybe even more, but for hunting you need to put it in a 6" circle.

Freedom: Build your own AR-10. There's a bunch of affordable kits available as well as tons of aftermarket parts so you can build it your way rather affordably.
Euro: Depending on where you are in Europe. Some countries you can get Siagas and VEPRs quite inexpensive and they're some quality economy semis. Others you might be limited to milsurp bolts or Italian shotguns because you'd blow half the 1000 Euro budget on licensing and tests, so it'd vary from Benelli Novas / Stoeger M36 to Siaga/VEPRs and G3/FAL conversions.
