My understanding admittedly with a very limited knowledge of vessels of the time is that the British ships were on balance faster and had better fire control, but were outmatched in the direct contest of guns and armor.

Lütjens did the best he could all things considered, he tried to use Bismarck's speed to avoid confrontation with anything large enough to hurt them. It was Lindemann who eventually ordered that Bismarck open fire when Hood and Prince of Wales began closing the distance, and I agree with the captain's choice. By that point they were being engaged and needed to fight back.
If anyone deserves blame for Bismarck's loss, it was Raeder for authorizing the sortie in the first place. There was nothing demanding a rushed surface raid with only one battleship and one heavy cruiser.

I thought that when they checked the shipwreck they found almost none of KGV's rounds pened the armour belt, they only did damage to the superstructure. Could be wrong but I do know that the Brits couldn't sink it with just gun fire and even the torpedoes didn't kill it, the Germans scuttled it

The Royal navy was firing from point blank in naval terms, they couldn't depress their guns enough to aim at/below the water line. The battle was over after the first few salvos, after that they just kept pumping shells into the Bismarck for the hell of it.

Bismarck and Tirpitz can comfortably punch thru a KGVs maximum side armor at nearly 20,000 yards, while a KGV can’t even reciprocate at 10,000 yards (Bismarck Class had an armor deck behind the belt unlike KGV so it’s not just the belt it has to go thru, and while multi layered armor is not as good when it comes to high velocity shells it’s better against heavier slower ones like what the Mark VII fired)

going by Navweaps the british 14 inch gun could penetrate 13 inches of armor at 15000 yards and 12 inches at 18000 bismarck had a maximum belt thickness of 12.6 inches, so at some point between 15000 and 18000 yards the british 14 inch gun could definitely penetrate bismarck, it certainly would have had absolutely no difficulty at 10000 yards penetrating nearly 16 inchs of armor.
its also worth noting that the german guns penetration figures are against german armour, and the british had significantly better quality of plate.

Bismarck's armor is screwy because the Germans had this idea that fighting would get in close. The belt may be very well protected from horizontal fire, but the conning tower, rangefinders, and turrets were all still able to be penetrated at close range. Also, Prince of Wales penetrated the Bismarck's forward hull and caused a loss of fuel. The design gives the end result of the battleship which is ~40% armor (higher percentage than many other battleships), survives intact as a hull, but has lost the ability to command & fight.

Bismarck had a 5” deck behind the 12 1/2” Belt, KGV has nothing of the sort, so its not just the main belt it has to go thru, there is more to the side armor. I explained this already.
At 19,685 yards Bismarck can penetrate to KGV’s magazines, the maximum belt thickness was 16” over the magazines. KGV cannot do the same to Bismarck at even 10,000 yards. Even if we just look at the belt itself, KGV’s can penetrate 11.2” of side armor at 20,000 yards (only a 315 yard distance from the closest German AP data at 19,685 yds so this is the one to go with), still not able to reciprocate, and that’s made even worse considering King George V is several knots slower.
No the British didn’t have better quality armor plating, if you’ve ever watched Drachinifel he’s explained on multiple occasions that the British were tied for top-quality armor plating the world with the Germans, their process was very similar, and Nathan Okun has come to similar conclusions, check out his data on armor plating.

Bismarck class armor was inefficient. All or nothing was better since USS Nevada, but the Bismarcks wasted lesser armor at the ends of the ship and in thinner belt armor (the belt was thin higher up, thick in a narrow band, then thinner lower down).
The max belt thickness was narrow and too low.
The main deck armor was too low. After the hits from PoW at Denmark Strait, hits could be made above the maximum belt thickness and let in water.
KGV armor was better; a thick single deck and uniformly thick belt.
