shelf life is more for warranty purposes. polymers could theoretically lose some of their desirable properties overtime and not meet the same protection rating if they're used alot or improperly stored but the same can't be said for ceramics which are pretty stable materials over long time periods.

Shelf life of body armor is drastically underestimated for legal reasons. No body armor company wants to guarantee a plate that is stored in a hot car in Phoenix or Vegas for many years. A plate stored in a climate controlled environment will last much longer than the warranty.
