food science student here. hydrogenated vegetable oil is added to the peanut butter so that the oils that are in the peanuts don't float up to the top. this looks ugly and people may think it's a bad product, so the hydrogenated oil is added as a stabilizer.

the added oil is no more or less harmful than the oil found naturally in peanuts.

if you have a blender, you can make your own peanut butter by adding dry roasted peanuts (and some salt at the end). to blend things up more easily (and also to stabilize the butter), a tablespoon or two of any neutral vegetable oil can be added.

they're unsaturated fats that have been "saturated" with hydrogen through a chemical process which yields a more solid fat as opposed a liquid oil

in the past the hydrogenization process was less refined and a by-product of the process was trans fat which is when the double-bonded carbons in the chain are in the trans configuration (because it's more stable than a cis bond) but modern hydrogenization can avoid this

OP here. I havent heard of the new method for not making the oil a trans fat. As far as the food student, come on bro you legit think the guys in the industry will be unbiased and tell you the full story?

hydrogenated fats get purified, so no trans fats there.
There are also new methods replacing hydrogenation like interesterification and I've also heard about fractioned trans fats and there are a couple of other methods, but I don't really understand them. Anyways you can do your research, although seeing you don't trust the food student, you probably don't trust researchers.

btw I am a vet student and veterinarians are the ones who regulate food products in EU.
