Water fast 7 days. Seriously. If you start 36 hours after your last hard workout then your body will remain anabolic and protect your muscle for the majority of 7 days. Even if you went 14 days youd be lucky to lose 200g of muscle.

Literally everyone on the /fast/ general can confirm. The snake diet guy even proved with body scans before and after that you can fast as long as 20 days and lose 0g of muscle. Calorie restriction eats muscle, fasting does not.

1000 calorie deficit x 7 days a week = 7000 calorie deficit a week

1lb fat loss is generally approximated as 3500 calories, so that's 2lbs a week approximately

I don't disagree. Muscle fibers and tendons and ligaments are not the only sources of protein. The only organ that requires glucose to operate is the brain. It requires Next to nothing, every day. Gluconeogenisis does not spontaneously occur. It occurs as necessary.

One cool thing about humans is that we have evolved to be very energy-efficient if needs be. One of the innovations we have is the brain's ability to use ketone bodies as a fuel source. Only after about 4 days after completely consuming fat stores does the body have to break down existing proteins to make up a ~10g day deficit between ketone production and needs. This is unimportant here, but the body then becomes more efficient at recycling proteins if the starvation continues.

Other mammals' brains cannot use ketones as a fuel supply and so their bodies are forced to degrade brain function to preserve skeletal muscles or break down skeletal muscles to preserve brain function.

Humans also developed the Cori cycle, which is important in both sustained anaerobic activities and begins to contribute more in fasting. In this process, lactic acid produced in the muscles as part of the normal anaerobic pathway is shuttled back to the liver cells and reprocessed into glucose before repeating the cycle again, basically squeezing out every last drop of energy.
