Sour dough olive bread I made. Switched from rye to wheat because it tastes better, is handled easier and has more protein (12%). I complement my lunch sometimes with it (2-3 slices) and I honestly see no problem there. It has fiber and is more nutritional than most other carb loaded foods I guess.

Polyunsatured is a small part of plant oils. Furthermore it breaks down when cooking at high temperatures. So making that the sole talking point regarding plant oils is just silly. And you should know yourself of saturated + acrylamid and that this happens at different temperatures depending on what you use. And that's not the end of it. Fuck me for not remembering it in detail but you got a limit in the digestion system on how much you can process, over that it's likewise harmfull even if you use the better plant oils. There is a publication with recomended limits for pregnant mothers because it could even affect the kid.

I live in France and have lived in Austria and travelled all throughout Europe. This statement is bollocks.
Europe's flour is factory farmed. Europe also use dwarf wheat, not heirloom varieties. Bread in Europe would also count as a processed food.
Perhaps you can more easily find things like sourdough, spelt, rye, etc (especially in Germany!) but most Europeans just eat white bread.
The difference is not in the type of wheat used, but more so what is added to the dough. In Europe bread is not fortified with iron, and tends to have less additives like vegetable oils or onions meal and such. I think their are some other "bread refiners" or something that are often added to bread in America but are banned in the EU too, but I don't remember entirely. Also, I'm not sure if it makes a difference, but less GMO here too (then again, I don't think wheat is GMO in America either, rather the corn, onions or canola that might be added to bread).
European bread is not good, it is less bad, and arguably you have better alternatives more readily available (like sourdough spelt or rye!) for those who care, and Europeans are more likely to eat their bread/pastries with real butter than with margarine.
