Right now I'm only squatting 295lbs for 5 reps, but my 5RM was 335 lbs. For whatever reason, my squat has always lagged behind and been fucking terrible in comparison to my other lifts. Have done 3 plate before, but now I'm a 29 year old boomer with an injury history so I mostly do front squats with 185 or 225 for higher reps.
You're right though that normies almost never go above 2 plates. Anyone squatting 3+ plates for reps gets noticed at my current gym.

unless youve been diagnosed with hip problems you can likely deadlift and squat just fine. do mobility, foam roll etc
for dl, learn to hip hinge properly. try doing rdls to practice the movement. basically hyperextend your back. push your hips back and lean down, dont bend your knees too much and feel tension in your hamstrings

self diagnosing is probably incorrect. not trying to shit on you but 90% sure you can. your bad form on squats is likely aggravating a mild problem making it worse than it really is. if you start using good tech and religiously doing mobility (also you might be doing mobility wrong going off you not knowing how to squat) youll likely be fine

when you stretch/roll remember to do all surrounding shit (quads, hams, glutes, errectors, abs, basically everything) not just the hip joint

Your hips probably aren't build for it. Mine aren't. The femur runs into the top of the hip joint and prevents me from getting into the right position without snapping my shit up. The trap bar allows for a far greater variety of body types. Don't listen to anyone that tells you the big 3 are meant for everyone.
