The dutch weren't that tall when they had their trading empire. The height gains have come largely within the last century. Look it up if you don't believe me.

nah man. Look up poland. Wages are getting better and better, this aint no Russia/ukraine or belarus. Poland/czech republic are almost even to portugal and will in a few years come to italian and spanish standards. You can easily net 2000 eur as a dutch speaker at a corporation. These 2000 Euros are quite a lot if you compare it to the cheap prices here. If you've specialisation in IT or Business and speak a westerne european language you will get even more easily. Trust me, the future is here.

Short female here (5'3"). I know a tall guy (6'2"ish) who has a weirdly negative attitude toward short guys. For instance, if I mention that I find a certain male celebrity attractive, his response is always something like "short guy, though."

I think he's kind of insecure because his height and looks have always been his "strengths", so the idea that short guys can be just as (or more) desirable might seem threatening to him.

Doesn't he just like you or want to impress you, causing him to downplay other men to make himself seem more attractive?
