It's the concentration of specific enzymes we need in order to digest certain sugars and proteins, which kind of renders the structure of a sugar irrelevant if you don't have what you need to digest it. There's even more to factor in when you consider that enzyme synthesis or uptake is dependant on a very specific balance of hormones present in our bodies. We can keep going down this rabbit hole but we won't, because your understanding of biochemistry starts and ends with "a polysaccharide has more atomic bonds and a monosaccharide has less" which is entirely incorrect as you can have larger sugar molecules which don't chain.
