sure, make sure you don't over eat or fill things with sauce, i'd go with rice over noodles too, chicken with sauce has a great balance between fats and proteins, and veggies and carbs will fill you up with energy

The sauce is just cornstarch and water added to whatever the juices are of the dish. The amount of cornstarch used is about a tbsp depending on the size of the dish. I wouldn't worry too much about it, user.

Pro chef here, 10 years in hell and counting. "Chinese Sauce" is actually something we call china brown sauce. You generally season chicken stock with onions, sugar and hoisin (high sugar), then boil and thicken with cornstarch. This is the basic shit on say Broccoli Beef. They then add chilies or garlic or whatever to change the sauce.

Rice and veggies are good, but China cooking uses a lot of oil to cook, and the sauces are generally high in sugar and salt. As long as you watch the sugar and salt, don't fry too much junk, and keep the veg content high, Asian cooking is probably the world's cleanest eating.
