You are refering to starvation mode which occurs when eating 500~ calories a day which can lower your metabolism, not to be mistaken with actual fasting which you do in order to not get any insulin response and can allow you to lose a lot of weight fast and reset your metabolism. I've been weighing myself twice daily in the morning and at night and have been starving myself, have eaten like 3 meals the last week.

I recommend you and anyone who thinks like this look up the Minnesota Starvation Experiment. This was done during WWII with the goal of finding out the consequences of prolonged caloric restriction (not fasting) on the body, to see what the Americans might be dealing with in Europe trying to rebuild after the war.
They all lost plenty of weight... and plenty of muscle, became weak and lethargic and psychologically sick, and all they thought about was food. And importantly, when food became available, that is, when they began refeeding (stage 2 of the experiment if you will) they had an enormous hunger and ate huge amounts of food.
Dieting is just a faddish way to do this:

• Ate an average of 5,212 kcal a massive amount when compared to the 3200 kcals they consumed prior to starving them.
• Ate nearly continuously then slept or ate
• Slow increase of social behavior at meals
• As time passed they all felt nearly normal with food
