Cholesterol is used to plug the fucking arteries from tears due to chronic inflammation, high blood pressure and in general poor cardiovascular systems. It's not a sum of all of the cholesterol consumed/produced over your lifetime.

All protein is high in methionine. If you want to restrict methionine you have to restrict protein intake, not a specific food item. If you're getting 100g a day of protein from other sources but not eating eggs, you're getting a lot more methionine than if you eat 30g of protein a day all from eggs.
