If meat wasn't heavily subsidized and had the externalities of flooding from land use, GHG emissions from methane farts priced into it, pesticide, fertilizer and herbicide externalities for growing feed priced into it, and if endless waves of migrant labor, legal and illegal were stopped, meat wouldn't be an issue. It'd cost $20-30 a pound and people would eat a reasonable amount.
As is, it uses a massive amount of migration labor to keep wages at Rock bottom, gets tons of government aid on the supply side and demand side (food stamps), and all there extra enviornmental costs are passed on to tax payers and people living in farms' water tables or in flood zones instead of the consumer. It's an economists nightmare.

5. The fact that you need to use land for agriculture to feed the 320 million Americans, thus severely reducing natural pasture land. For example, less than 1% of Iowa today is natural prairie.

The reason it varies from 20-50% is because you have multiple ways to calculate it.
If you just look at tonnage from agriculture and subtract CO2 captured by agriculture, you end up below 20% with some fuzzy math.
You can also inflate to 50%.
First, methane is a far more potent GHG than CO2, so if your concern is the GHG effect, you need to weigh methane on its relative effects, not based on weight. Obviously agriculture has an incentive to just do all GHG in tons rather than accounting for this.
Second, is the transportation and refrigeration of livestock part of the agriculture, transportation, or retail industry. Shifting this changes things.
Is the production of fertilizer and pesticides industrial or agricultural?
This is how you end up with wide bands. None of this means that a significant reduction in subsidies for meat to reduce it's price below its real cost (including externalities) wouldn't drastically reduce demand, and thus reduce GHG emissions and land under cultivation radically.
Complicating matters in the US, the prairie states have multiple times as many senators per voter as the coasts and South. So while the gains primarily go towards the prairie, the costs accrue to litoral areas (due to flooding) and Southern farmers (due to poor climate). You're actually starting to see a split with Southern and Western farmers because high temps tires and drought are fucking yields and raising costs, while models show the prairie potentially getting an actual boost from modest warming.
