First, soak in a bowl of milk in the fridge.

Next day, rinse em and slowly simmer them with a shitload of onions, maybe peppers and carrots too, salt and pepper, and some wine.

Use a slotted spoon to put the L&O on some rice or taters.

Then put a little flour in the pan juices and whisk it up into a gravy.

I'm no expert but I decided that I was definitely dieing when I couldnt focus my vision anymore. Getting out of bed was a colossal feat. Everything hurt and I would feel like fainting after I got up. So I yelled my mom and she took me to the doctor.

The thing they concluded was that I was eating too much organ meat (dad hunts moose and smaller animals too so we have a huge freezer of this shit all years round and my brother hates it) and that allied to the fact the only bovine meat I'd eat was liver and ground chuck (it's autism I know but I hate other meats).

They asked me to suspend all meat except the ground chuck and was ok after 1 month. They said that the liver damage was minimal and I should be careful from organ meats.

The doctor also said that 1 oz of bear liver can kill you. But I've never eaten bear thank God.

Soak in milk for half and hour, dry it in paper towel, dust in Florida, shake off flour, fry for a couple of minutes either side, leave to rest for a couple of minutes. Nothing more difficult than that. Add salt and pepper before frying obvs. Time depends on thickness.

Heart is great for you. Needs to be fresh as possible. Cook quickly.

I've found the best way to get it down is to chop it as fine as the texture allows and saute it on high heat with butter and onions, then add it to some other complementary dish (another user mentioned strogonoff, which works well). I've also thrown it in with pasta and vegetables with some cheese.

It's just as great as liver.

I feel there's like two ways to go about cooking liver:

You could take advantage of its crumbly texture and make a pate (chicken liver pate is quite nice)

Or you could go against that by cooking liver quickly on high heat. For some reason beef and pork livers are better for this. A personal favorite is stir fried pork liver with peppers

Side note: If the flavor of the liver is too strong/metallic, try soaking the liver in water to get out the residual blood. Who knows? Might make the meat more palatable.

Soak 24 hours in milk, use the milk with eggs and flour to make a season covering, dip and pan fry, serve with onions, shallots, and sour cream, or a nice gravy. Food of the Gods.

Best of the internal organs though is the heart, it's good meat, it's healthy, and you get a better nutrient density from it. There is a reason natural predators eat the internal organs.
The brain is also really good for you, full of good fats, some anthropologist surmise that human evolutionary adaptions were caused in part by our ability to eat the protein and fat dense brains of the animals we hunted.

Either way, eat more offal. It's good for you, it's cheap, and it's better than striated muscle mass in terms of conversion.
