If you're still progressing on your main lifts, and at a rate you're happy with, I'd keep going with whatever you're doing. It's infinitely harder to put on muscle/ strength than lose weight

I don't count calories so I can't really help with this one, but the ol' -500 cals followed by -100 each week until you're happy with your rate of weight loss should be fine.
If you're still progressing though, keep doing what you're doing and worry about losing fat later

At the moment i am getting ready for a bodybuilding contest and am only eating about 1300-1400 calories.
Meal 1: 55g PB, 60g Fat free yoghurt, 1 scoop PEscience protein, 1 rice cake
Meal 2: 1 eggs, 5 whites + 100g spinache, 30g chopped onions, 3 small bellpeppers
Meal 3: 4oz Grilled chicken, 160g riced cauliflower, 30g chopped onion, 2 servings G hugh Sugar free BBQ sauce
Meal 4: 4oz flank steak, 4oz turkey, 1 sunny side up egg on a homemade salad + low Cal Zesty dressing
Try that meal 1. Mix it all in a bowl and spread onto a chocolate rice cake. You can thank me later!
