Is it a good idea to do grip work on "rest days"? Seems like it wouldn't be an issue unless you were doing something like back the next day.
research weight lifting techniques, meal prep for entire week, sex for cardio, orgsnize your daily progress picture album, plan goals and compare how you are doing toward meeting said goals, analyze each aspect of your routine and find mistakes you're making, plot out lifts in reps, sets, and weight on a graph in order to visualize gains, hire a photographer for better tinder pictures and pussy gains
Do cardio or HIIT. I used to do body weight stuff or additional low intensity isolation shit on rest days when I was doing a three day split, on one of the days I'd play sport too. I was bulking anyway so it just meant I ate more and made sure I was sleeping enough.

Yeah that's a good idea, grip seems to recover pretty quickly although you want to be careful you don't overdo it early on since there's a risk of tendinitis if you go too hard too early.

you have to consider the longevity of your routine. it's more than likely if you're training 5+ days a week heavy you will struggle to recover for the next session, so your lifts will plateau. failing that, your gains will slow the fuck down.
could you do some light cardio on your only rest days? well yes, but will this accrue fatigue over time? yes

I go for a long walk once every 4 days.
I go push legs pull walk push legs pull walk.
The walk is a nice refreshing feeling, get the blood flowing, get that fresh air, also boosts TDEE for the day by a nice chunk. I generally walk for 2-3 hours. Along beach or whatever.
I never do the walking or any cardio on my lifting days.
