Ask your body for some feedback. How does it feel when you keep track of intake macros at a certain carb/fat/protein ratio? How does it feel to change it?
I feel my energy level and mood change when I adjust intake, and my research suggests others feel similar changes as well.
No one outside your body can tell you exactly what is right for you, but people share certain biological truths that may help you with your intake.
Remember that intake is a habit that may require some adjustment period as well!

It's been ages since I've looked at the actual recipe, but here's what I've got from memory. It's basically your run-of-the-mill (hehe bread joke) recipe, but you pour water on the inside of your oven while it's baking
>10 cups wh*te flour
>1 packet baking yeast
>1 tsp salt
>oregano, Italian seasoning, garlic powder en masse
>mix yeast, salt, flour in a bowl
>add as much of the herbs as you like
>prepare a big pot of hot water and put several bay leaves in it to make a kind of tea
>add hot bay leaf water to the flour, yeast, etc. until it forms a very large, semi-sticky ball
>put a Seran wrap sheet over the bowl for about two hours
>put some flour on your counter
>knead the dough for ~10 minutes
>rip that bitch in half
>take each chunk and stretch it to baguette-length
>grab the sides of your baguette fetuses and tuck them underneath
>place a warm, wet paper towel over each protoloaf for another hour
>oil a baking sheet
>place dough loaves onto the sheet
>set oven to 450 degrees Farenheit
>bake for ~10 minutes
>mix olive oil and parsley together in a bowl
>use a brush to apply herb oil to the loaves
>grab 1/2 cup of water, pour it on the inside of your oven and quickly shut the door
>bake for ~10 more minutes or until the herbs on top of them start to burn

Again, I'm reaaaaal fuzzy on the details because it's been so long. You can also just use it to make breadsticks.

your tolerance to high-glycemic index foods is variable. if you're relatively fit stick to carb intake after prolonged fasting (first meal) & after lengthy exercise. Stick to a time restricted feeding window.

I don't know you. Some people are highly carb resilient. Others end up riding sustained insulin levels from high processed carb heavy diets and turn into landwales. For most people, you should be getting most carbs as part of unprocessed whole plants - embedded in quality fiber.

Raw oats aren't refined. Neither are wholegrain bread or pasta (though on cuts I'd cut them out too).

I'd say that they're potentially alright energy source for endurance runners, other than that I'm not so sure.

I still like the taste of warm fresh bread with crispy crust.

Refined carbs are actually bad for you. GI is a meme though. Whole wheat bread, bananas, etc. are completely fine.
