I cook my sweet potato and eggs in the microwave. My boss (he’s a chef) said the microwave “denatures” the nutrients of the food. He also said that if you panfry meat with olive oil, the olive oil becomes trans fat. Is this just normie bullshit or is it true?

Any protein exposed to heat above body temp (outside of specially adapted extremophile proteins) are going to denature, which simply means the protein is losing it's functional 3-D shape to basically just be a long string of amino acids.

srsly tho raw meat isn't that bad. I eat raw steak from the butcher pretty often and have never gotten sick from it. Raw kangaroo from the supermarket as well. Haven't tried old meat raw though.

He's retarded. Only biological macromolecules with non-covalent 3d shapes can denature. Nutrients can degrade in the presence of more extreme conditions, but the heat of cooking usually doesn't do much to small organic molecules (need to get particularly hot to get significant chemical transformations, in the range of 350-500 degrees). Microwave ovens simply generate microwaves that resonante with water's vibrational frequence (specific energy for O-H bonds) that causes the water molecules to absorb a bunch of energy and essentially heat up. The temperatures of a microwave oven generally can not reach the high temperatures required for major chemical transformations.

Heat changes its structure and can often unravel the ball into a polypeptide string, like said, which makes it easier to digest as enzymes will access it easier during digestion.
There was also a study done on cooking vegetables in the microwave vs boiling and the amount of nutrients lost is actually greater with conventional cooking methods in contrast to microwaving.
With oil you should always be sure not to expose to extreme temperatures but microwaving food with oil for a bit isn't dangerous.
