Why do so many people deadlift with a rounded back? And what's with those jerking movements some people do to get it all the way up? Do they not understand that if you can't lift it the normal way you're not meant to lift that heavy?

They probably don't know how to set their lumbar straight. For that you need to open up your hips. It's like pushing your knees out but without changing shin angle. It's weird, took me 2 years to learn how to fucking deadlift, despite watching youtube form videos for 30 mins daily on average during those two years. Then one day it all started coming together.
Upper thoracic rounding is an advanced technique used by advanced lifters and has no correlation with lower back issues.
It's an advanced technique initiated before the bar leaves the floor. Rounding during a pull is a sign of someone who hasn't fully mastered the technique.

The absolute state of 'proper form' deadlifters.
When the weight becomes maximal the only way to get it from your knees to lockout is to hitch. Which is not allowed in powerlifting.

I wouldn't say its the only way but yes. The point is to use the rounded position to generate more momentum to carry you through to lockout. Hitching isn't "required" but it could occur if the lifter fails to engage the glutes enough or pull the hips through quickly enough etc.
one time I had 2 bitches on my back and was told to squat them. Did it for like 10...maybe 250lbs tho, not 315lb

Most people should use a trap bar and or blocks/handles.
Straight bar is just awkward for the human body and creates a ton of torque. It's only standard because making a straight bar bell was easier/cheaper as the sport developed.
