That's not big. If you truly subsist on so little you are a skeleton and you're malnourished in others as well. To answer your question, we eat over 2000 calories in a day because that's bare minimum to not be ravenous with hunger, if you've got some kind of muscle mass to maintain. Muscle takes a lot of calories. I have a hard time getting below 3000 calories in a day. For breakfast it's usually a large amount of oats with a heaping glob of peanut butter and coffee with milk, followed by a post-workout banana and whey, then for lunch usually something protein dense like eggs or meat with some incomplete protein like beans to go with the grains and nut proteins from earlier, and for dinner I eat the biggest meal because I want a lot of proteins in me while i'm sleeping and yet I want to carboload a bit for lifting in the morning so I end up eating meaty pasta or something. I try to get some veggies in for either lunch or dinner too and that's on top of rotating a series of supplements: zinc, iron, magnesium, manganese, vitamin C, vitamin D, vitamin A, glucosamine, and creatine.
PS. I'm not fat by any means. This is just what happens when you've been training for over a year.

I am 5'9" 135 lbs. I honestly think I eat less than 1,500 calories a day. Not only that, but I walk a lot at my job (probably 5-6 miles a day) and also bike 10 miles a day for my commute.
My wrists are literally 5.5 inches. I'm never gonna make it
