that's true. but veggies are about imagination.
It doesn't have to be waxy-skinned, hard-crunchy and difficult to eat/digest.
It could be as simple as thinly-sliced tomatoes or crushed garlic, or a sprinkling of diced onion.
It goes pretty well with PB imho
