Imo you'll encounter digestive issues and/or Fructose-related metabolic damage if you stick with fruits/vegs and plan on getting a decent chunk of energy from carbs. Why not have a plate that is like 1/3 easy to digest carbs with poor micros like white basmati rice, 1/3 vegs for micros, 1/3 protein (beans would also add to micros a lot). Then a fruit for dessert if you want. Anyway just an advice like this because I tried high sugar from fruit before and it's health-deteriorating in my opinion.
In short, yes. Mufas like Oleic Acid that is predominant in Olive Oil slightly decrease metabolism, saturated fats increase metabolism. Having high metabolism is very beneficial for thyroid and hormonal production and generally having the system functioning well (think of it like a furnace). Good reads if you care :

I eat both olive oil and coconut oil, pufas are the ones you want to avoid most. In all cases several studies have shown that high fat diets no matter the type is bad for health. Olive Oil also has unique components that increase T in some studies; it is pretty healthy in small quantities but I believe having a predominantly saturated dietary fat composition will have net advantages.
