Good, Bad, somewhere in between?

I love the taste and cured and "uncured" meats such as salami satisfy this deep primal urge within me so I'd hate to give it up.

be careful of the quality of the meat, a cheap sausage will have you shitting all night long. things like are the worst offenders, never actually buy a product of Mexico.

but if the meat quality is good, there's no problem other than high sodium, which will only be an issue if you don't get enough potassium to balance it out

What makes chorizo so bad?
As a euro fag all our chorizo is spanish. A actually thought it was purely a spanish thing

Nitrates are pretty bad for you but once in a while isn't the end of the world.

Just make sure that when you eat meat you eat fiber with it, it will prevent you from getting ass cancer.

in the USA, you have to be very careful about Chorizo. I can fully understand it not being an issue there, because Spanish food and food standards are amazing and I'd eat that sausage any day, but Mexico doesn't exactly have the same level of regulations or care when it comes to food products, and you very often receive the absolute lowest quality meat physically possible, completely doused in spices and added fats which no gut would be able to handle.

always pick uncured and frozen/fresh meat where possible

I heard this stuff is usually cured with celery powder though, i.e. organic stuff as opposed to chemicals. Ive also heard that celery powder and a lot of other vegetables contain significant amounts of sodium nitrate. Thoughts?

I eat high quality meats and sausages regularly from a farm-based delivery service. Great source of saturated fat needed for hormone production. Just don’t buy from Hormel and other shit-tier meat makers. You can also learn to make stuff like this yourself. Pic unrelated.
