Posole, enchilada casserole, beef or chicken with peppers and onion, stir fry, fritatta, chili, pork and green chile stew, berry and greek yogurt parfait (stevia added)

Just finished a bowl of shrimp and okra.
i make this every week.
1 green pepper
1 onion
6 chicken leg quarters
1 small can of tomato paste
1 can of rotel
one can of beans
one can of corn
approx one cup of dry lentils, cooked.
cook chicken till meat falls off bone(approx 1.5 hrs at 350) pick off and set aside
sautee peppers and onion, cook with tomato paste and season(i use salt, oregano, cumin, coriander, chipolte powder)
drain beans and corn, add with rotel, add chicken and lentils, check seasoning.
Ive been making it weekly for over a year. eat it with rice, or salad, or i in a wrap, or mix it in scrambled eggs. Its awesome and versatile so i literally haven't gotten tired of it.

Does anyone have any vegetable recipes that they prep ahead of time and stay good for more than a day or two? I would love something that i can cook and snack on cold for a few days.

Grilled chicken musubi. I got addicted to the stuff in Hawaii, it's pretty quick to throw together, and got dat dere natty iodine and potassium
Feeling lazy this week so just going to bake a pack of fish fillets in asian jarred curry, steamed spinach and broccoli from frozen, jasmine rice, and some fresh veggies like a salsa I guess on top. Usually I'd make something with split peas, lentils, beans. And something else with beef or chicken. Veggies and other things included or on the side
For choice of snacks hard-boiled eggs, greek yoghurt (plus flavoured whey if I get bored), cottage cheese (plus berries, PB, etc. if I get bored), sunflower seeds, PB.
Oats (with wheat germ, LSA, whey, PB, berries/banana), and rye toast with avo, cottage cheese and hot sauce, both only take like 2-3 mins to make so I don't mind doing that fresh every day.
chicken thighs wrapped in bacon (marinate chicken in mustard/worcester 2-24 hours)

I too am a poorfag. When I'm not so poor I'll put ground beef inn it Instead off chicken.

you're gonna make it user. You might try loosening your standards on food and just limiting yourself to thinks that need preparation. So long as I cook all my food each day I usually undershoot my calorie goal by several hundred calories (even at a 1000 kcal goal deficit) without really trying. If you're still overeating you might give up meal-prepping (assuming you're doing that) and cook everything when you're hungry. Can't really eat impulsively that way

Is non-premium really that bad apart from being fattier? Huge price difference in budget, but I suppose premium from a bulk butcher is just as cheap when I can be bothered.
