I'd assume most of their training involved hand to hand combat, training with a variety of weapons, horseback riding, and training to work as a group with other knights.

This is also true. Ransoms among knights were so common that they invented the "brothers in arms" system as a primitive insurance method where all the knights would pitch in to pay the ransom of whomever among them was captured.
They mostly sparred and did body-weight training. No one out there was producing plates so they just practiced for combat by simulating combat.

You're vastly overestimating sword weight, two-handed swords of the era weighed like 5lbs. (Even later, huge af swords like the Zweihander maxed out at 10lbs)

Ransoms between knights only just barely even existed at the height of the age of Pageantry, when Chivalric codes were actual law. For most of the middle ages, "knights" were either just trained fighters with some money and local backing, or straight up mercenaries who stole their equipment and titles from the former camp.
Also knights could absolutely stand after falling from their horse. Unless the fall actually broke their spine (super common on horseback). Full plate weighed at most 40-50lbs and would usually be custom-fit to the owner. Read up on Medieval mercenary companies; the prevalence of this behavior was so high that Chaucer alludes to it in the Canterbury Tales.
If you stole some shit that didn't fit you and lost mobility because of it you'd usually just pawn it off to get drunk or screw around.

Having the mantain a speed pace to draw ,correct position, aim , and also mantain great strengths to pull it continously.
