The reason you cannot get into a proper front rack position is becuase of lack of mobility (not in wrists) and weak upper back, which means you have problems achieving thoraxic extension. Thats part of the idea of doing front squats - they challenge your ability to keep upright by having a strong back while being a great quad dominant exercise.
When you do crossed arms you get less stability, less balance, less of the benefits training thoraxic extension. So work on your front rack:

I think I may need to try a wider grip, looking at how some people in the first video are holding the bar. I can't point my elbows totally forward because my wrists begin to hurt.

HORRIBLE bar gripping, it shouldnt be in the middle of your fingers but rather at the base of the fingers in the palm. I dont know the name of that area.
I can do this with 4 fingers on each hand touching, but the bar is too close to my neck. I feel like I'm going to choke.
It sounds like you need to work on flexibility too. One tip is to consciously relax the traps and shoulders, entering correct posterior chain posture. Its a common reaction to such uncommon position to shrug and transverse adduct the shoulders.
Arms bent back (aka barbell clean) is a weightlifting move and is used for the clean jerk. If your not panning on ending the move with the bar above your head, there's no real advantage. But if your interested in weightlifting (actual Olympic weightlifting), it's a requirement.
Also, it's not all about wrist flexibility. Bodybuilders often find it difficult because their biceps are just too big to get their hands that close to their shoulders.
Whichever way you choose just remember the bar should always be resting on your clavicle. The fingers/hands are just there to keep the bar in place. If your shoulders or wrists are taking any of the load, you're doing it wrong.

Try varying your arm position, I found trying to go with straight arms was bad with my wrists, while bringing my elbows in and going for a wider grip with 2 fingers was way better
I hate doing it either way so I just use my deadlifting straps and wrap them around, so I'm holding the bar about 1-2" above the bar itself from the straps.

If you don't even have the wrist mobility to full hand grip don't try to front squat. It's fucking embarrassing.
This is the worst front squat rack model I've ever seen. He can't get his full hand on the bar and he's way too close to his shoulders. They didn't have anybody else around who could've shown correct form?
