That's bullshit. Many states pay above minimum wage and tipping is more important regardless. Waitresses in my state commonly make around $30 per hour for taking food to a table. The guys actually making the food in the back get paid much less.

This is actually another point I wanted to bring up, I'm a barista so I make drinks and I get tipped for making them look nice and giving them a warm smile and small conversation ect. But I don't expect tip, I might add extra caramel or whatever if you do but I won't look down at you if you don't. I also used to work at a restaurant as boh (back of house) so I would do everything from dishes to prepping and cooking and cleaning the entire kitchen after hours. I would get paid minimum wage and I wouldn't understand why when I burned my hands trying to make sure your burger doesn't burn or the cheese doesn't crust, the tip goes to the girl who took your plate from point a to b and then goes to the back to tell me how awful you and your children are and how you won't tip well cuz of how you look or your age.

The thing is that very few waiters/waitresses work full time. They may earn more per hour, but they work a lot of less hours a week than, say, the cooks. Employers benefit from this because that way they pay less social security and stuff like that overall. Why don't they get a second job then? Well, their dynamic time tables makes it difficult to do so, since one week they may work on different days an in different shifts than the previous. Why don't they get a better job, then? Well, who knows. Some are lazy, others are literally not capable of for a variety of reasons.

In some states in the US at least it's technically legal to pay tipped workers as low as $3 an hour. However, if they don't make enough in tips to make up the difference between their base wage and the minimum wage, the employer has to pay out up to minimum wage. It's basically a way to make the food prices cheaper because labour is cheaper and you can just attract a larger volume of people and get more tips to make up the difference. Any tipped workers who complain about this are essentially lying when they say it hurts their income.

I've had them try and pin missing food on me, make everyone in the kitchen remake food we've sent out 15min ago, tell us it's our hair in the food when everyone in the kitchen has dark hair and the hair in the salad was blonde (front of house), they were just the worst discriminating people. I get paid minimum wage plus tip so I guess that's why I don't mind nor expect tip but to me I hope if I do get tipped it's only because they like my service and not doing it out of pitty or 'tradition' it makes me feel like you're giving a dog scraps. I'd much rather prefer a good review on my service so my managers know how well I'm doing. So I've adapted to a new system where I have my name on the tip jar and it states something like "Tip jar machine broke, can user get a good Yelp review?" With doodles to catch attention. Having good reviews gets me more hours and then gets me to remember the regulars which leads to better experience for them

Also think of it like this, when I was working boh I would work from 5pm -12am/1am while going to uni, run from the bus stop to work then walk the 3 or 4 blocks in a suburban neighborhood at midnight to get home then have class at 7am and catch the bus again. Sure I get the hours but I was also getting paid ~$7.50/hr, does it cumulate to the tips/hr the waiters get?
