Remember that 5-a-day is a half-assed meme. If you look at the actual evidence (and adjust for your size and caloric intake), it's more like 9+ a day to really minimize your disease risk.
Personally, I do:
1. 15 oz/ 420g can of beets
2. 1 lb 454g broccoli florets
3. 100g broccoli SPROUTS
4. 450g tomato juice (whatever, it's just to make the others work)
5. Blend to a liquid
That's doable in minutes every day and serves as a good "insurance" to make sure I'm getting enough.

You generally shouldn't eat as much fruit because they contain a lot of fruit sugar and you cannot substitute fruit juice for the actual fruit.

Good luck cooking and eating 1000g of vegetables a day. Every fucking meal will be like wading through a garden, and even a dash of most sauces will add more calories than the vegetables themselves. Plus you'll have insane amounts of chewing, even if you season it.
I'd much prefer to choke down a smoothie in 3 minutes than deal with that shit

DESU you don't HAVE to eat a pile of vegetables. This is what I eat (I don't eat these specific amounts each day, this is the quantity if I were to average it out over the week).
Herbs and spices contain huge amounts of certain vitamins and minerals. One of the ways our ancestors avoided crippling deficiencies on really basic diets was seasoning; shit is magic.
I don't always use salmon and almond butter, mackerel and sunflower butter are similar enough that I can swap them for the same quantity without losing anything.
massage with oil, salt, lemon juice and dijon. makes a great base for a salad, pairs well with pasta dishes.
also good to put in soups. it's not the best veggie taste but i like it when properly prepared

Contrary to popular beleif, vegetables should be consumed only in moderation unless fermented first. They contain as many toxins as they do nutrients these days. Try to eat more low carb fruits and tubers instead: onions, carrots, radishes, sweet potatoes, zucchini, squash, tomatoes, peppers, etc. If it's a leaf or a stem, it's a vegetable and humans are not good at digesting large ammounts of vegetable fiber. Low carb fruits, roots, and tubers are what you want. Naturally pickled/fermented veggies are great too. The rest of your calories should come from meat, fish, eggs, and dairy, if you can digest it. Stay away from whole grains, phytic acid is fucking poison. The Chinese haven't been removing the hulls and bran from rice for thousands of years just for shits and giggles. Humans cannot metabolize plant fiber, and we do not have the enzymes necessary to neutralize phytic acid either.
Any method of Cooking is adequate enough protection, what you seem to be implying is true when the vegetables are consumed raw.
