I've been doing bouldering for 5 months now. I'm starting to hit a plateau. I don't have enough strength. I need to start doing some lifting and deadhangs.
I'd like to try outdoor climbing when summer comes.
Rock climbing is about pushing hard for yourself, mental gains, feeling at one with your body, and communing with nature.
Nothing to do with "getting Grillz" or aesthetics. If you're not into the outdoors roots of rock climbing don't get into it.

I just started on V5s and for a lot of them I just don't have enough finger strength.
make sure you're doing proper rehab or you're headed for some gnarly pulley tendon injuries that will extend your plateau by years

i did about a month of it and got up to v4 at my gym, but it got way too expensive at $75/mo.
Look at Jason Momoa. That dude flys all around the world to climb, and has for decades. He leads like 5.9.

Well, from one direction. No overeating. But can get away with going too far the other way, with not eating enough.
Been climbing years now and generally don't play the caring about numbers game, but jumped on a scale recently and 67 kg at 6ft? Nigh skelly territory.
Needs be I fix an eating problem that doing climbs won't tell you about.

For what it's worth, I've been climbing just a little longer than you have (top rope) and I generally don't find finger strength to be a limiting factor. Most of my improvement has been technique-based.
i'm meeting some new friends and going climbing with them today. any tips?
I'm assuming you're new. Is this indoors/out? Some tips that come to mind:
>don't try to haul yourself up the wall with your arms. Push with your legs instead
>Only grip holds as hard as is necessary. Over-gripping will make you tired.
For indoors;
Be aware the climbs are color coded. Likely you'll end up rainbowing anyway but following the set problems is most interesting.
Take shoes with thinnest soles you can get, ones that will deform least under pressure. Not like you'll want to drop $150 on specialised shoes first time out but the assistance you get from actually being able to stick your feet to a 1/2 inch hold's the biggest thing you can do to have a good go at any climb.
In fairness, they're usually available for hire but ehh. Added cost, plus potentially manky.
Climb to your strengtgs.
Keep an ear out for tips on laying off, loading weight etc..
Probably most important, have fun. Doesn't need he super cereal, tho being in the zone is tun too. If you enjoy, you'll stick to it so yeah do so.
