You gain way more mass on 4x12 but you need to do strength training like 3x5 every once in a while in order to get/maintain decent numbers bc doing just lightweight work won't make the cut

It really doesn't matter.
Just aim for your sets in the 5-10 rep range.
If you pick a weight (say 200lbs) and you end up getting 3x10 with it, you can easily go upto 210lbs and do 3x6-8, then just do 210 until your 6-8 turns into 10, then go up again to 220 or whatever, and maybe you'll get 5-7, then keep doing that 5-7 till its 10, then repeat.
I do this for all my lifts now, I don't actually do any specific target on the given day, its all 5-10 rep range.
Make sure your compound lifts are mostly heavy 3x5 then on accessory work go for 4x12

With a hit like bench and squat you would think it was safer and better for the joints to go lower weight and higher rep.

If you're doing hypertrophy work, do it: high volume, low fatigue, low intensity, lots of lactic acid accumulation and proper rest etc ex. HST, any bodybuilding specialization program etc
If you're going for strength, go for it: very low volume, high intensity, low fatigue so you can get neural gains and train frequently if not every day ex. bulgarian light, madcow, hepburn method, any powerlifting peaking program etc

This has been undisputed for decades. HST routines optimize all three to prevent plateaus in both size and strength.

Till your recovered, there's no strength or muscular benefit for rushing through sets, thats just cardio, and you shouldn't be using cardio when your trying to gain strength & muscle mass.
