That's not something we have a ton of control over. The body kind of does what it will.
I tend to be a big believer in sleep hygiene. I have no screen time for 1 hour before bed. I brush my teeth and bathe before bed. I ensure the room is completely dark. I keep the room cool.
Basically I control the factors that are in my control. Beyond that, it's up to my body.
I go to bed, I make sure it's comfortable, and I sleep enough to feel rested.

Would it be worth tracking it with a watch or something and then working out how many hours of sleep are optimal for you?

Regarding a watch--in my opinion save your money. I started listening to my body. At first I would stay up until like 10:30, but I realized that deep down, I was tired at 9:00 and was just pushing through. So I began sleeping at 9:00.
Then, for about a week, I did not a set an alarm. I went to bed at 9:00 (which was the time my body chose, not me), and I slept until my body woke me up.
That gave me a really solid insight into how much sleep I needed.

Make the room PITCH black.
Use white noise (fan, etc).
Keep the room cold (around 60 degrees)
Don't use any screenlights 1 hour before bedtime.
Have a set sleep/wake cycle. Your brain will adapt to the rhythm. If you need more help setting up this rhythym consider using Melatonin and Diphenhydramine (ZQuil is ok) half an hour before bed. Use it for a few weeks but don't create a dependence on it.
Caffeine can really fuck with your REM sleep, caffeine has an incredibly long half-life of 5 days in your system. Try to keep your sips/coffee in the morning and no later than the afternoon.
Ensure you don't have sleep apnea. If you find yourself waking up multiple times at night breathless it can indicate it. If you constantly wake up to piss, don't drink anything 2-3 hours before bed.

Well man, the question is: how important is bodybuilding to you? The more sleep the better, ESPECIALLY when trying to grow. If you're wanting to cut corners on your recovery you will inevitably reduce your ability to gain muscle. Hence, the question about your priorities. If bodybuilding is the most important thing to you right now, you will make sleep a priority. If other things are more important right now, there is no harm in that, but know that prioritizing anything over training, eating, and sleeping will negatively impact your progress. Sorry if that's a little direct.

are there any other people who occasionally (maybe one night a month) "wake up" and realize you are still asleep? i feel like its when i am dead asleep, i will wake up but my eyes will be closed and i know that im fast asleep but my brain is awake. usually lasts for 10-15 secodns before i wake up
