Check how oly lifters squat. That's what you should be looking for. Rip teaches lowbar

Rip also says low bar is better for working the posterior chain and lifting heavier weight. Oly lifters either do front squats or high bar back squats because that’s more analogous to what they do in their sport, but I’m just training for general strength.
Rip teaches powerlifters. As such, he tries to make them lift as much as possible. You can load more on lowbar because it uses more powerful muscles and I think has small rom but don't quote me on that. Anyway, the point is that if you want to strengthen your quads, you should do highbar or front squats. As you said, lowbar trains the posterior chain a bit more, but so does the deadlift.
Of course, if your goal is competing in powerlifting, absolutely go for the lowbar.
By the way, what olylifters need as part of their movement is front squats, not highbar. The fact that they train highbar is a hint that it's better for general strength
