I like to start with an onion in a little oil, cook that up then add the liver with diced celery and green bell pepper. Add salt, pepper, garlic, if you like spicy throw something in there to add heat. If you find the thought of liver disgusting try adding some beef as well or spicy Italian sausage so it's kind of hidden. I've been eating liver once a week on average.

Obviously a chicken has very small of these if you get a chicken with giblets. Turkey with giblets can be much more sizable.

>use a whisk to smooth it out
>add 6-8oz of red wine, reduce
>add 6-8oz chicken or beef stock, reduce
>salt and pepper sauce to taste
>plate liver, top with bacon/veg mix
>Add a healthy drizzle of the red wine sauce
>finish with a squeeze of fresh lemon, garnish with parsley

For the rookies out there, I recommend pig liver. Slice into thin strips and soak them in milk overnight in the fridge. Pat them dry then fry them in a hot cast iron pan in butter or bacon grease, 45 seconds on each side.
