Started at 270 Jan 1st, been averaging 622.8kcal per day since then with an hour of low intensity cardio per day since Feb. Last weigh-in was wednesday and I was 177lbs.

you're only eating 600cals or do you count exercise? thats ridiculously low, maybe try to increase your intake, you can still lose weight at 1200cals. so you have no goal in mind? you should atleast have a moveable one. height?

After the first few weeks I noticed my average intake was like 800kcal, so from then on I tried to stay underneath that, and then it went down to 750, and so on.
The number I had in mind when I started was 160lbs, now i'm close to it every pound of fat I lose is noticeable.

at some point you'll have to rid yourself of that mindset. fatness is the culmination of many small mistakes, and weight loss is the culmination of many small successes. so taking a few weeks at maintenance may be beneficial for you.

Where can i get good numbers on the nutrients in the lean meat of a whole roast chicken? I wanna cut my sodium intake if i can and save money, and roast chickens piss all over reformed tat meat off the shelf for sanwiches. frozen chicken breast normally has added water, and sometimes added sugar / syrup, read the packaging is generally reliable

slower progress is not the end of the world, you need to drill that into you head somehow
just ease into it, test the waters to prove the sky won't fall if you do

Would it not make sense for this calorie estimate to include the skin and drippings too, thereby making a 109+10% error estimate more sensible with drippings drained?

2. iv found that the only way to actually know if you've lost weight is to take pictures. the scale messes with my head since iv gained 20lbs since iv started and i swear on me life that im leaner.

Nothing really, been doing OMAD, but there hasn't been a significant change in my body. I have a feeling I will still look like shit even when I get to 180, and may have to do a water fast on alternating weeks to drop even more weight. I'll be going to the beach in 6 weeks, and I'm no where close to where I should be.

Also doesn't help that I was doing so much cardio, I got jumpers knee, so that is less calories I can burn. I have been working out since the New Year, I have gotten stronger:

1 pullup->sets of 12 strict form pull ups
10 pushups->Sets of 25+
5 dips->sets of 15
3 bodyweight rows->sets of 12
Was able to jump rope 10 sets at 3 minutes each.

I might just cut out carbs since I eat rice. I'm really desperate to at least look okay without a shirt, I'm getting really scared I won't make it, and it is making me sad. Will still keep working though.

Purely doing cardio is the worst strategy for weightloss as you have do to more cardio the lower your weight gets, and most people stop doing it because of injury or boredom (lack of progress)
