I would eat a lot of beans, rice, greens, and fruits for snacks. Plus food from the restaurant I work at. Easily 2000 cals worth.
You need to eat dark leafy greens every day really. Also make sure you take a teaspoon of flax seed/chia seed.
I've been vegan for a year and a half now and feel great. Granted the first hurdle was the first month. I think it was because I needed my gut bacteria to adapt. But hey if it's not for you have you tried vegetarian or ovo? You could also do vegan with bivalves+occassional crustacean it's what I did in the interim.

Turns out I had B12 deficiency (along with some other deficiencies) which can take a long, long time to noticeably manifest. I had other symptoms, as well, but my short-term memory crashing is what drove me into a doctor office.
A lot of vitamins and minerals are stored in your body fat. A vegan diet causes you to drop a good amount of weight, and I would suggest it temporarily for that purpose, but as you break down body fat you release those vitamins and minerals, which can cover up the dietary inefficiency of veganism. Once you approach low body fat, your nutrient deficiencies hit you all at once.
I've got a whole year of my life where my memories are like swiss cheese. Do not pick up a vegan diet as a long-term lifestyle.
For non-bodybuilding vegan info, I like Unnatural Vegan on YT. A bunch of videos on how to do vegan safely, the risks and regularly debunking nutjob vegans.
As for doing it yourself:
I'd go vegetarian first, see how that goes.
Then start using vegan protein powders. There are some good ones out there nowadays (mixing pea and rice protein isolate usually covers everything). But they simply don't taste as good as whey, so figure out how to use them. I'd invest in a Nutribullet thingamajig. Makes life so much more convenient.
Then use the proper supplements (b12 being the main one) and go vegan. Keep an eye on macros and if you ever feel weird, see a doc and do a blood test.
In my experience, individual people can either handle vegan or they can not. If you can't and there is no way to improve your diet or supplementation, they you are just out of luck and should go back to vegetarian.

The key is dark leafy greens, and a fuck load of chickpeas. Learning to cook is an important part of it too as you can't just throw meat at something and expect it to work. If you do it right and cook aall your meals yourself it's cheaper than having meat and diary in your diet. That said invest in a b12 spray if not for anything else but peice of mind.
As a student don't concern yourself too much with it if you are out and need a snack and can't find anything, take it at your own pace: some people can do it all at once others need time.
