For most people I think they need less rest that they take. More important is good sleep and eating right and hydration.

The only time I need more than 0-1 rest days a week is because I fucked up and forgot to eat or went drinking or didnt sleep well.

Rest days are pretty important, in my experience it takes a while to really overtrain, like 2 weeks or so with no rest days, and then you start feeling like shit, have no focus and your mind is constantly foggy. Even if that doesn’t happen, another big issue are your tendons and stabilizing muscles needing rest to heal, not just the large muscles. Its easy to get tendonitis or injuries if you skip rest days, not to mention you simply won’t perform as well assuming you actually train hard

What's wrong?

During the rest time is when your body repairs damaged muscle cells which in turn will do that "supercompensation" thing or in other words allow you to adapt and overcome.
Beginners can recover pretty quickly so if you find yourself being able to go full out on a daily basis, you are still in beginner mode.
For intermediates and beyond, you will require longer rest times to be able to adapt hence why your routine needs to change.

How the fuck do you know when your good to go though?I only do push ups and pull ups. Does that mean I shouldnt be resting compared to weightlifters?
Also I only do about 3 sets of each per day

okay, are you talking about rest between sets? Because thats different. This aspect can also be trained to specifically deal with some goal you are trying to reach such as muscle size, strength, mimicking endurance of some sport, etc.
The amount of sets doesn't really matter as long as you are putting in the same amount of work. Such as doing 5x5 is similar to 3x8. However, both will affect muscular endurance in different ways.

Chin ups
Rows
OHP
Incline Bench
Curls
Pushdowns
Lat raises
Squats (low volume)
Deadlifts (low volume)
Legraises

Made like 2 months of gains in those two weeks, but definitely felt knackered and sore. Wanted to sleep 24/7. Could definitely only do it on a holiday.

I mean the days where you don't work out. After I finish a set, I work something else out before returning to it in like 5 minutes.
The problem is, I have no fucking idea if I am doing enough or not. 1-2 hours later after working out, I usually feel the energy to be able to do the whole workout all over again which makes me feel like I probably didn't do enough. Even though I physically cant do anymore and I am grunting by the 3rd set.

I dont really have a goal. I am just aiming for something like pic related.
I do cardio ( running ) once every 2 days and currently do push ups, pull ups, and curls everyday. Ive also been trying to up the amount of protein and food i eat

You want to increase volume then which means you want to increase number of reps per set such as 5x15. If you are doing something like 3x12, you can try to increase that to 5x12.
If you feel as though you can go again within a couple of hours as if you didn't workout at all that day, i don't really know what to say to that. I never ran a bodybuilding routine so someone else will have to answer your questions on this.

They arent. Rest from certain muscle groups are more so, but you dont need any day to "rest"
On my rest day I do cardio and abs/calves since they dont get any real direct training in my primarily compound lift routine.

If you're not on roids, they are pretty important. I did bulgarian a while back, benched every day and put about 50lbs on my bench in a month and some change. Wound up snapping my arm up surprisingly and not my shoulder.

I'll admit I'm smarter now and I could probably avoid injury pressing every day from shit I learned from rehabing. But I still won't ever do it again. Just listen to your body brah, if your shit feels sore as fuck it probably isn't wise to go back at it. If you're just a little sore you're probably fine.
