it's a processed food. low nutrition for the calories. lots for the body to digest through for little return. tastes good due to processing, salt, and (unhealthy) fats.
Much like bread, it was developed as an easy to feed the pleb-tier masses. Very cheap, as you could store (age) dairy without advanced refrigeration.
