What can I eat between meals anons? So far I've been eating hard boiled eggs, Nature Valley Crunchy granola bars and plain lays chips in between with yogurt and fruit occasionally. Is this good enough or should I drop the lays or something?

Mostly to keep calories up. I eat breakfast and eat dinner at 5 at my job (I work for a kitchen they cook for us). Then I get off at 12 am. So I don't have time to eat 3 big meals usually

Snacks are basically irrelevant to this so long as you are overall staying about the same weight and getting enough protein from your meals (aim for at least 30g of complete animal protein at least 4 times a day).
If you aren't getting enough protein from your meals, then have protein shakes as snacks or as the beverage with your meals. Don't bother trying to boost your protein intake with lots of small doses, just have lots four or five times a day and you should easily meet your overall requirements. A big serving of protein will stimulate muscle protein synthesis for four to six hours.
Other than that, you need carbs for muscle growth. Very few people will fail to eat enough carbs unless they are deliberately avoiding them though.
If you want healthy joints, try eating pork rinds / scratchings for collagen.
In order to maximise natural testosterone, you will need to provide your body with some cholesterol (one or two eggs a day or some red meat is probably enough) and the right minerals. Eating some fruit and vegetables will probably help, but track your food with cronometer or some other app and check if you are getting enough of all your micronutrients. Raw onions and pomegranate supposedly help T production too. The former is unpleasant for most people, but the latter can be quite nice (but expensive if you buy it prepared and tedious if you don't).
One other thing you may want to try is very dark chocolate. You want something that is at least 70% cocoa and obviously you should track calories and weight to make sure you aren't overeating with calorie dense food like that on the menu.

You really want to get more high-protein meals. Whey protein mixed with milk or dairy substitute is fairly cheap and somewhat convenient if you have somewhere cool to store it. Just get a shaker, add a heaped scoop of whey powder (40 g of isolate or 50 g of concentrate, measure it the first couple of times and then judge by eye), pour about a pint of milk on top, shake it all up and drink it. I think it tastes pretty good as is, but you can add pretty much anything you want to flavour it; coffee, sweetener, cocoa, blended fruit, vanilla essence, etc.

It may be quicker to cut and bulk (or vice versa) rather than recomp. Trying to persuade your body to build muscle and lose fat at the same time is tricky. Google a body fat calculator and estimate your bf%. If it is over 15% (assuming you are male), you can cut until you are lean. Otherwise, probably best to build some muscle and worry about fat later.
Either way, if you are at a healthy weight, most of the work is going to be in the gym (or on the road, etc.) not the dinner table. Apart from 'lots of protein' what you eat is mostly irrelevant for body composition compared to how much you eat and how hard you exercise. Don't get hung up on eating the right kind of food; once you are getting enough protein, it's basically just energy regardless of what form it takes. Some stuff might be marginally better than the rest, but exactly what is difficult to judge.
However, lots of protein is essential. As well as whey shakes, you can try scrambled eggs (recommended recipe; two whole eggs, 200g egg white, low-sodium salt to taste, teaspoon of rapeseed oil for the pan) and oily fish salad (couple of cans of mackerel or sardines, big bowl of leafy greens like spinach, low-sodium salt, black pepper, lemon juice, apple cider vinegar).

Vegetables man. Carrots, snap peas, celery and cucumber are always good. I dip them in hot mustard because basically zero cal and also am weird.

Such an open ended question, what are your goals? If its fat loss the only snack allowed is water and chewing gum.

Green pea crisps from Aldi if you absolutely need something salty. 1.40 US for 3 servings decent enough fiber composition to help keep you full for awhile and at least some protein.

If it's the first half of the day, I usually have some fruit if I really want a snack (apple, orange, plum, apricot, pear etc)

If it's afternoon/evening, and I'm still hungry after dinner, I'll have a small serving of protein, like a boiled egg, plain yogurt, cottage cheese or a small can of deenz (120 kcal worth)
