What should I do if I end up fighting with someone bigger and stronger than me and can't escape? What would the basics be? Should I strike for the neck first? I've never been in a situation like this and I'm really curious.

first, dont get caught off guard.
second, be the one that starts the fight. so you dont hvae to react to the bad guys moves.

last, stay home and you will be safe.

Outboxing someone bigger than you that doesn’t know what he is doing isn’t that hard so long as he isn’t a foot taller than you, head movement, knowing how to roll with the punches, guard, timing and distance management as well as good striking technique will all give you massive advantages, not to mention having more fighting experience

I worked in a bar and during a big fight some guy twice my size came up behind me and put me in a choke hold. Dude was huge and strong. I reached back and rubbed my thumbs in his eyeballs as hard as I could. The guy couldn’t do anything after that.

FIRST, keep your guard and try to talk to him. Street fight are most of the time a psychological/misunderstanding thing, so keep the guard high, keep a certain distance and TALK.
If it doesn't work and he wants really beat you, sto hits first USUALLY wins. THIS is how you have to land the first strikes.
Then, LEAVE. 1-2-3 strikes, not more, they just serve to make him concussed a little and make you leave or get out of the corner.
Pro-tip: martial arts training and weightlifting are less important in street fights, however they will make you faster in landing strikes and stronger, so they can be useful
