My workouts are fine but I know there's something wrong with what I'm eating because I just feel awful, lethargic, and unfocused all of the time. I cutout obvious processed foods, and do intermittent fasting (I eat only within 6 hours in a day) but I know there's gotta be a more efficient way of eating and feeling better. What do you guys do for your nutrition and how do you feel on that diet?
Going full keto is retarded. But people generally eat too many carbs. Also lower the amount of red meat as well. Personally I like a Mediterranean type diet. Lots of fish, olives, vegetables etc.

Depends on your goals, but generally speaking the Mediterranean diet is one of the more studied diets and it's been shown to be healthy.

Food pyramid is proven by scientists and doctors to be the healthiest diet. Lots of carbs for building big muscles, little fat and just enough protein so it doesn't sit undigested in the gut. I always avoid organ meat, it has a ton of vitamin A, bad iron and cholesterol!

Furthermore, grass fed beef, eaten rare, or raw, may be the healthiest food (for humans) on flat Earth. This is my opinion, but everything ever said by some bloviating vegan, is also his opinion, no more valid than mine, or yours.
The "Mediterranean diet" is just a marketing stunt by the olive oil industry in Southern Europe. The only populations in that area who enjoy decent health and longevity are those eating high-carb diets based on legumes and a few whole grains, and use virtually no oil.

I feel gross and gassy and bloated most of the time, a real unpleasant unclean feeling. Is sucralose the likely culprit? I eat too many protein bars/too much powder, so I can only assume as much.
Eat as many vegetables as possible while keeping within your calorie allowance. Eat a variety of different vegetables, but focus on greens. Eat a large serving of animal protein (30-40 g of protein) four or five times a day. Get a small amount of cholesterol (couple of eggs a day, or some red meat). Get a decent amount of omega-3 (can of sardines or mackerel a day). Track your miconutrients with an app and adjust eating habits until you get your RDA. Use supplements if you need to. Don't worry too much about macros. Anywhere from 25-50% of your calories from any one of them is fine. If bulking and you already ate enough vegetables to get all your vitamins and minerals, feel free to eat basically anything. Avoid caffeine and other stimulants. Don't restrict your eating to certain times of day or regularly go days without eating unless that is the only way you can stick to your diet. Occasional fasting for a day or two is fine if you want to, but not an effective long-term fat loss method. Recognize that not all problems can be fixed with diet. Sometimes there are other things which can make you feel unwell. If you are absolutely convinced that your diet is the problem, you will have to identify the specific things which are causing you issues. No common food fucks up everyone, but a lot of them will fuck up some people. Eliminate dairy, grains and sugar first. If that doesn't solve anything, try keto, carnivore, vegan, etc. Once you have identified a diet which makes you feel better, try to narrow down exactly what you can't tolerate by reintroducing foods gradually.

I don't think that's actually likely. As I understand it, gas is usually caused by bacteria 'fermenting' undigested food in the gut. But sucralose is not only mostly indigestible to humans, but also to bacteria. There is basically no mechanism by which it can be turned into methane. It seems more likely that you have issues with something else in your protein. Possibly lactose.

It makes you shit more after having some (it speeds up peristalsis simply by being a general stimulant which is absorbed through the gut), but it doesn't seem to mess up the actual bacteria or digestive system long-term. Any tips for weening off caffeine? The headaches slay me, even through ibuprofen. I can't work with them and am hesitant to spend PTO on riding them out at home.

That's a bold conclusion to draw. You could have sleep apnea problems, low testosterone, just not be sleeping enough, Lyme's disease, and probably lots of other shit.
