How will strength gains differ doing 3x8 vs 5x5?

I think that both would increase strength, but due to the higher reps in 3x8 youd get a bit more hypertrophy than you would. On the other hand, the 5x5 may produce better strength gains due to less reps per set. I'm not sure exactly but that's just my reasoning.

3x8 gives you less volume and probably more hypertrophy than 5x5. I imagine that if you stall on a 5x5 for a certain weight, either add another set of the current weight (so 6 sets instead of 5 for your 85%1rm) or switch over next time to 3x8 for 70% of your 1rm and run that for a week before returning to 5x5.
