I really don't get what the fuck everybody bitches about liver for. When you are cutting up a literal entire cow liver that shit can stink, but dealing with eating sized portions is nothing. Even without any seasoning I find it just has kind of a mild meaty flavor, with a kind of earthy flavor mixed in. Not great, but not worthy of people constantly bitching about the taste.

Slice it up thin and cook it in a cast iron with onions, mushrooms and loads of butter. Add whatever spices you like. Add a few scoops of sour cream (real stuff not shit american stuff). Fokin delicious.

Marinate in onions sauce and mustard overnight then stir fry it with some onions. Eat with taters or rice or sumthin. Never done this but works with other meat, and umami is best at masking the taste of liver.

You can treat heart like a regular piece of meat and it tastes pretty good desu. Lamb heart is incredibly mild too when it comes to "offal" flavor.

Lightly dust with flour and then fry. Serve with carmelized onions. The trick is to take your time with the onions, they should take a half hour or so, really bring out those sugars.

Beef Liver on rice is always nice, make sure you find a recipe where it's soaked in gravy, if you cook it right it should taste mildly sweet and savory; you don't even need to manually sweeten it. plus the gravy soaks nicely into the rice and makes it all come together nicely.

I don't have an actual recipe unfortunately, I'd have to get that from my mom who isn't doing well these days.

If you're too scared to eat raw liver, you can try and soak the liver overnight in milk, it will take some of the metalic taste out and make it more palatable

Most store bought paté is made with pork liver. It's preferable to make it with chicken liver as beef will probably have lots of nasty hormones and stuff. Liver is supposed to be the better tasting part of any animal, store bought liver tastes like this because it is a grain fed animal which means it literally comes from a sick animal.

Its because its not grass fed. My parents also noticed the decline due to the factory farming method of starch feeds(corn, grain) on cattle. Starches outright destroy the cattle's body(same as ours), and the use of antibiotics further increases that destruction, such that 30%+ of cattle livers are discarded because they are destroyed around the 12-14 month period of the animal's life, which is when they're slaughtered.

If you want subdue the disgusting taste of factory farmed liver, BBQ it. Otherwise it just tastes like fucking ass with any other method. That try to find a grass fed only liver. Do get an idea of a non-factory farmed liver, you can more easily find it in South America(not Mexico).

Drench in flour, pan fry in some olive oil and butter (make sure to not overcook), remove from pan, insert onions and sauté, when translucent add minced garlic for 1 min, insert stock and deglace, liver goes back in, add touch of cream and finish cooking. Serve with potatoes and put some parsley on top.

If you get it properly fresh and from a healthy animal it tastes great. Whenever I can get it like that from my butcher I just cut it in slices and eat it as steak and it tastes sweet.

Usually supermarket liver does have that mineral taste to it which isnt as good as nice fresh liver, and in that case I just cut it in pieces and stir fry it with chopped onions and peas, with some onions sauce and other condiments.
