Don’t marinade. Those are good fish, the meat tastes great on its own. Just fry them fast and hot in a pan with a good amount of oil. Salt and pepper after you peel the skin back, and some lemon juice or onions sauce if you prefer. Or just butter or garlic butter, or olive oil if you’re just a bit gay.
