If you feel the relationship going South, don't immediately jump ship. Start getting more emotionally distant, say things that paint her in a bad light to coworkers, but generally keep it on the low.
The goal is to not care and to have people on your side when it actually ends. If this doesn't happen, good luck with finding a new job

It totally depend on you guys. I've done this and ended up with us suffering for half a year. It was shit and none of us quit the job. We couldn't be with each other but also missed our relationship. Many ups and downs.
At the end we got over our issues and now it's ok.
We also didn't tell the whole place about us so none of us shittalked about the other. I guess this depends on the girl (and how does it end). So just don't be an asshole :)

What you should do is make sure this is a good relationship before taking it further. Make sure this girl is someone you can actually tolerate. No, I'm not talking about finding her hot or taking her out to lunch or something, I mean, can you actually tolerate sitting in a room with her for 6-7 hours? Do you guys actually get along or are you just horny and flirty? Has she had a relationship with any of your other coworkers, and did those end really well or really badly?
If a coworker relationship goes south, you're royally fucked. You probably won't get fired, but your days around her will be miserable. So, go for it, but only if you're certain that you can actually get along with her. Make sure she's actually interesting or fun to be around, and not just hot or clingy
