Only really in grappling, strength can help make up for a skill gap as long as it's not too big, and being stronger than an equally skilled opponent gives you the advantage.

Judo was my understanding the easiest art to use to kill someone quickly, but any art with the suffix DO is essentially for therapy and has les transferance to life, while any aret with jitsu is the kind that is used for practical stuff. So by that logic Jujitsu is and should be the easiest way to tackle multiple people.

I train Judo and strength training really helps.
The reason Judo doesnt work in MMA fights is the soft mat and the fighters are shirtless. On the street, everybody wears shirts or jackets and the concrete floor is my friend.

I don't know a ton about bjj, maybe that variant is completely grappling modified, but judo is mostly about throws, so I figured bjj would have a lot of throws that'd be practical in that sense.

Martial arts is applying strength in an efficient way. But if you just have far more strength than your opponent it´ll be difficult for them to win even if they are better at fighting.
Its a matter of higher input vs higher efficiency. Best to have both.
Are strikes allowed on Judo? If not it would be awesome to learn Judo and Mui Tai. I guess I forget about throws because of my background in Wrestling so I know my basic throws and guards. Just have to modify them for illegal moves and I'm set. I'll look into Judo though seems like it would be a good pair with strikes

Judo pairs with boxing very well due to being able to enter the clinch, and counters wrestling or forward pressure pretty decently. The major advantage is in quickly transitioning to a choke or submission. That plus leg kicks is about as good of a base as you can have.

Judo is mostly about learning throw, that's about all I know. I also know the throws are fucking fatal if done on anything other than a mat with real force, so fighting big fucks with it is crucial.

You hit harder. Can force techniques easier and can take hits better. You're joints are stronger and less susceptible to damage and your structure is stronger by default.
In fighting strength is more a greater range of weakness than actual power itself. A weak person has to hit as hard as they can. They have to grapple with everything. A strong person can fight with 10% and by extension won't tire out nearly as quickly.

training is about leveraging your strength, but if you have no strength theres nothing to leverage.
Strength and weight make a HUGE difference, and if they are different enough in those terms then training makes an even smaller difference. Weight classes exist for a reason. At that difference the huge guy could focus entirely on not getting clocked in the jaw and simply grab and over power the smaller opponent

He may have logs for arms, but he has to swing and lift those arms and in a fight its very tiring. As for wrestling he just need to get on top of you and you're fucked, his weight does everything.

These guys are minmaxxing for their size. They have much more cardio than most people, of course, but on an elite level athlete they would rather focus explosive strenght or grappling power over cardio. Do note this is on a top tier level, they WILL outpace and outrun most people, it's just that an elite fighter that's on the lower bracket would have more cardio than heavyweights. This is simply because their advantage (their massive weight) is a detriment to their cardio (in an elite top tier level, these guys can still probably run marathons without problems).
All in all, strength helps. A lot. But so does cardio. So start lifting, running and skipping rope.
I think you're over estimating how much of a difference strength and size makes in this context. It only takes one punch to end a fight and potentially even kill your opponent.
The larger man can, without question generate more power in his strikes—but unless those strikes actually connect, they're mostly useless. A smaller, trained boxer for instance will absolutely not allow the larger opponent to get an angle on him that allows the opponent to strike him in a damaging way. This is one of the first things a boxer learns. As soon as an angle on the larger opponent presents itself the little fella will take his shot and the fight will be over.
Remember, being heavy and strong give you two powerful offensive tools that you can use however big tall and muscular doesn't make your head immune to impact. Your brain smashing up against the side of your skull will fuck you up regardless of how big and muscular you are.
