Use the Smith machine while you're at it. It hardly works your core/stabilizers as much as cross country.

we have arc trainers at the gym, they are even better than a standard elliptical

If I do HIIT on the treadmill the tendon on the right side of my right knee gets really really sore as my right leg is rotated clockwise a bit, puts major stress on it running

Oh the irony. Even a person with a basic knowledge of physics could tell you ellipticals are lower impact. That wasn't the issue I was addressing. The issue I was addressing is being weak and afraid of running. Something that has been done for centuries. Since the dawn of man even. People who live in fear are usually some of the most unsuccessful people in life. The issue is not joint impact. The issue is being such a soilent dyel nerd that you literally avoid running altogether because you're so worried about your joints.

I trained up on elliptical from 5min to 40min intervals. I started increasing speed and difficulty. Hardly makes me tired or out if breath anymore.

Did treadmill, but main limiter is shin splints i get after a run for speed. Although, just now found heavy incline walking while carrying dumbbells is excellent body conditioning thats low impact.

For warmups amd general cardio sessions i use AMT. More complete movement. Get DOMs of entire legs/ass if you use it right.
CANNOT CHEAT like elliptical (has weighted wheel that you can "ride" momentum). On amt, every step has be be your avtive efforts.

As long as your not running marathons every week you're not going to damage yourself. A 30 minute run on the beach is not "high impact"

Honestly i run twice a week and do 40 mins of elliptical twice a week solely because my legs will be fucked to shit by leg day if i run more than twice a week

For me I can't do cardio indoors, it's too boring being stationary. I think running in nature has mental benefits you can't from being on an elliptical. Also you're not training your feet muscles on an elliptical. Other than that I guess the benefits are the same
